Easy Mexican Dinner Recipe

Just the other day I was craving something Mexican for dinner. Only with the low glycemic meal plan I am currently following, typical low carb Mexican meals do not always go with Mexican cuisine. I decided to rummage around in the freezer and see what I could come up with, and I was so happy I did. I was able to fulfill my craving, and create a new recipe to share with you.


In case you have never tried Rotel, I highly recommend it since this tasty mix of diced tomatoes and green chilies has so many flavors bursting from that one single can. Also, they take care of much of the flavoring for me, and the less I need to figure out, the better off I am. Do you make up your own recipes and wing it every night like me, or do you follow a recipe? I'd love to know your stand point on how you come up with dinner recipes every evening.


I began making up my own recipes as a teenager, but I can assure you I would have never qualified for Master Chef Jr. Those kiddos are like cooking prodigies, I was just making dinner for our family every night, making up recipes as I went, and hoping it was edible when it was all said and done.


I did not write down my recipes so they tasted differently every time I served them. My mother and sister never knew what they would be eating when we sat down to the dinner table, but thankfully I typically received compliments every night. I guess that is part of the reason why I was so willing to take on creating new recipes to share here every week.

Mexican Dinner Recipe


What you will need:

  1. 1 lb ground turkey (you could also use ground beef or chicken)
  2. 1 package frozen cauliflower (thawed)
  3. 1 onion (chopped)
  4. 1 green pepper (chopped)
  5. 1 can Rotel
  6. 1 t garlic powder
  7. 1 t onion powder
  8. 1 t cumin
  9. 1 t chili powder
  10. 1 t smoked paprika
  11. Salt and pepper to taste


What you need to do:

  • Thaw ground turkey and frozen package of cauliflower
  • Coat skillet with one tablespoon olive oil to prevent
  • sticking to pan
  • Place ground turkey, onion, green pepper, and
  • cauliflower into skillet and cook on medium heat until vegetables begin to
  • soften and ground turkey is no longer pink
  • Add spices to meat and vegetable mixture, stir
  • well
  • Add Rotel
  • Stir well, and serve
Mexican dinner night idea


This Mexican dinner night idea was mighty tasty, even Mr. VS loved it. When you are consuming a lower carb intake, you tend to need to get creative with dinner. I have a ricer and could have riced the cauliflower, but who has time for all of that? I simply removed the frozen cauliflower from the freezer, let it thaw, and then added those small cauliflowerets to the skillet. I honestly would not change a thing or even bother ricing the cauliflower. So yummy, and tasty.
