(Puerto Rican Meatballs in Sauce)

This is a recipe I've made for many years, and I don't add bread crumbs or eggs in this recipe by choice. You are more than welcome to add it to this recipe.


My mom always made this for me as a child, but she added bread crumbs to her recipe. I enjoy eating my food with meat in sauce, that is something I always love making on rainy or cold days. Is so comforting and the spices are amazing.


Adding homemade sofrito, fresh peppers, onion and garlic, fresh herbs or dry herbs makes this dish a great comfort meal.


Ingredients

(For the Meatballs)

1 pound of ground Chicken

1 tsp of adobo

1/2 tsp of oregano

1/2 tsp of onion powder

1/2 tsp of garlic powder

1/2 tsp of red pepper flakes

1/2 tsp of fresh or dry cilantro leaves


Salt and pepper about 1/2 tsp each

(mix well and form balls that are

approximately 1 inch in diameter, refrigerate until ready to use)


(For the Sauce)

1 carrot cut in circles

1 potato cut in circles

3 bell peppers yellow, red, and orange cut in circles

1 packet of sazon with color

1 packet of powdered chicken flavor

1 tsp of adobo

1-2 garlic, minced

1 tbsp of sofrito

1/2 tsp of oregano

1/2 tsp of cilantro

1/2 can of tomato sauce

3/4 cup of water add more if needed

1 tbsp of olive oil

Salt and Pepper to taste


Instructions

Heat a Dutch oven or saucepan, and heat olive oil over medium heat.


Add sofrito, sazon, chicken powder, onions, and peppers and sauté until soft, about 5-7 minutes. Add garlic and sauté for 1 more minute, then add the tomato sauce, oregano, adobo, cilantro, water, salt, and pepper.


Carefully add the meatballs to the sauce and cook, covered. (for about 15 minutes) uncover and add the potatoes and carrots.


Cook uncovered for another 10 minutes or until potatoes are tender. Taste and adjust seasoning.


Serve with rice and beans, or over mashed potatoes.
