These taco biscuit cups are a quick and easy dinner, but you can also make big batch of them to have around for lunch.



If you have any leftover taco meat from taco night, this is a great way to use it up!

Taco Biscuit Cups Recipe


Ingredients


  • 1 tbsp olive oil
  • 1 lb ground chicken
  • 1 red bell pepper (chopped)
  • 1 yellow pepper (chopped
  • 1 small onion (chopped)
  • 1 (1 oz) packet of taco or fajita seasoning
  • 1 (16 oz) can refrigerated biscuit dough
  • 1 cup shredded Mexican Blend cheese or cheddar cheese
  • Your favorite toppings: green onion, sour cream, salsa, hot sauce, etc.


Instructions


Heat oven to 350 degrees.


Dice up your peppers and onions.


Heat up a large skillet over medium-high heat with olive oil.


Then add the ground chicken, peppers, and onion.

Cook until chicken is cooked and the vegetables are soft and fragrant.


Drain grease and add the taco seasoning and 2/3 cup water, stir, and let it simmer.


While the chicken is simmering, separate dough into 16 rounds.


Spray a standard muffin tin with nonstick cooking spray.


Place rounds into each cup of muffin pan.


Press biscuits into the sides of cups to make a well.

Then fill each cup with a little bit of the taco filling and top with cheese.

Bake for about 15 minutes until the cheese is melted and biscuits are a deep golden brown.

Tips & tricks for making your own Taco Biscuit Cups:


  • Substitute the ground chicken to make these cool taco cups with pork, shredded chicken or lean ground beef.


  • These cups are super freezer-friendly! Cook a big batch, cool and then lay flat in a freezer safe bag or container and freeze. You can reheat in the oven or the microwave for your next Taco Tuesday.
