Italian Instant Pot Chicken Recipe With Tomatoes and Rice

This recipe is made with whole-grain brown rice to increase the fiber in our diets. The Instant Pot does well with whole-grain brown short-grain rice. It makes the rice tender and enjoyable in a short amount of time.

Here are all the ingredients I used to make this Instant Recipe.

First, heat the Instant Pot on sauté. When ready, add olive oil, then chopped onion. Cook for two minutes.


Add chicken breasts, granulated garlic, basil, and parsley, and cook for an additional three minutes.

Pour in two cans of crushed tomatoes. Add the rest of the ingredients - brown rice short grain, broth, salt, and pepper.


Press the pressurize button on the Instant Pot, turn it to high, and sealed for 25 minutes. After the Instant Pot decompresses, pull the chicken out, shred it, and return it to the Instant Pot. Then, mix well. Serve warm.


Here is the finished dish! It made a lot and was eaten the next day for lunch!


If you want it Spicy - add red pepper flakes when heating up the oil.


If you want to make it a more balanced meal, add some already-cleaned super greens and toss them into the cooked chicken and rice recipe after the Instant Pot has depressurized.
