Grilled Dijon Chicken Breast Freezer Meal Recipe

8 servings
24 min

I am sharing this freezer meal that you can easily put together, freeze, and when you are ready, defrost and grill in less than 30 minutes! This recipe is larger and will probably make 8 servings but can be used as leftovers for lunch or dinner the next day.

Here are the ingredients to use for this recipe.

I mixed them all together in a large bowl.

Here's how it looked after I mixed it. It's pretty thick. I then covered it with plastic wrap and let sit. Marinate for at least 1-2 hours but can go as long as 8 or 9 hours.

This is what it looked like after a few hours of marinating.

I added them to the grill. Cook the chicken for 5-7 minutes on one side and then turn it over for 5-7 minutes on the other side.

Here's the finished chicken. I also grilled asparagus and prosciutto on the grill with it. It was a delicious combination for a quick weeknight meal.

Ingredients

  • 3 lb chicken breast (thin cuts) or tenderloins (boneless/skinless)
  • ½ cup Dijon mustard
  • A juice from a Whole Lemon
  • 3 Tbsp white wine vinegar
  • 4 tsp Worcestershire sauce
  • 1 tsp Granulated Garlic
  • 2 TBSP Olive Oil
  • 1 tsp fresh thyme or 2 tsp of Dried thyme
  • 1 tsp fresh or dried Rosemary (crush with hands)
  • ½ tsp salt
  • ¼ tsp pepper
Instructions

Place all the ingredients in a large bowl if you are going to cook it tonight. If not, place all ingredients into a freezer gallon bag. If you are freezing it, remove the air from the bag, roll it up, and seal it tight. It should look flat, and there is no air in the bag. If you are going to cook it later, cover the bowl with plastic wrap and put it in the fridge for later. Marinate for at least 1-2 hours but can go as long as 8 or 9 hours.
Defrost the gallon bag from the freezer on a plate. Or remove the bowl from the refrigerator and let it sit for a few minutes.
Preheat the grill.
Remove the chicken from the marinating place and add to a hot clean grill. Adjust the temperature down to medium indirect heat of possible on your grill. Discard the marinade.
Cook the chicken breast on the hot cleaned grill.
Cook the chicken for 5-7 minutes on one side and then turn it over for 5-7 minutes on the other side.
Remove from the grill and serve.
