Aloha!

Maybe I've been binge watching too much White Lotus lately (yes I know I'm super late to the game) but I've been craving something tropical to make me believe I'm in that beautiful paradise.

But if you know me by now, you'll also know I'm super lazy when it comes to cooking, so it should be no surprise that I'm all about this super simple, yet incredibly delicious recipe: Hawaiian Chicken in a Crockpot.

This dish is perfect for those busy days when you crave something flavorful but don't have the time for elaborate cooking.

I hope you enjoy it as much as I do!

Ingredients

  • 4-6 Chicken breasts
  • 1 (16oz) bottle Hawaiian BBQ sauce
  • 1 (8oz) can crushed/cubed pineapple
Instructions

Place whole chicken breasts (or you can cut into cubes) into your slow cooker and cover with Hawaiian BBQ sauce and can of drained crushed/cubed pineapple.
Cover and cook on LOW for 4-6 hours or HIGH for 2-3 hours.
If you've left chicken breasts whole, shred the chicken with a fork while it's still in the crockpot. It should shred easily.
If you've cubed chicken - no extra step is necessary.
Serve in tacos or over rice with veggies. It's delicious in corn tortillas with avocado, coleslaw and mango salsa.
Tips
  • For easy cleanup, spray the inside of your crockpot with cooking spray or use lining bags.
  • Season to taste with salt, pepper, garlic and/or cayenne.
  • Garnish with green onion.
