Creamy Tuscan Chicken

This creamy Tuscan chicken is definitely one of my new favorite meals to make. It would be great for a go to meal as well as a fancy, romantic dinner. The sun dried tomatoes, garlic, and parmesan give so much amazing flavor that just can’t be beat. I love it for meal prepping. Not only does it reheat really well, but you can serve the chicken over noodles, orzo, rice, or just eat by itself. Even my picky eater boyfriend, who doesn’t like tomatoes or spinach, loved this! So I think the kiddos would approve as well. The best part is, it only takes around 30 minutes!

Season chicken with paprika, parsley, oregano, salt & pepper.

Pour sauce over chicken, bake, and top with spinach.

Serve over noodles!

Ingredients
For the sauce:
  • 1 clove of minced garlic
  • 1 Tbsp butter
  • Splash of dry white wine (optional)
  • 1/2 cup heavy cream
  • 1/2 tsp cornstarch
  • 1/4 cup parmesan cheese
  • 1/2 tsp Italian seasoning
  • Salt & pepper to taste
  • 2 Tbsp sundried tomatoes, chopped
  • 1/4 cup spinach
For the chicken:
  • 2 chicken breasts or 4 chicken tenderloins
  • 1/2 Tbsp olive oil
  • 1/2 tsp paprika
  • 1/2 tsp parsley
  • 1/2 tsp oregano
  • Salt & pepper to taste
Instructions
For the sauce:
In a saucepan over medium low heat, sauté garlic and butter until fragrant.
Add in a splash of white wine, heavy cream, and cornstarch.
Whisk in the parmesan cheese, Italian seasoning, salt & pepper, and sundried tomatoes.
Turn heat to low and let simmer while prepping the chicken.
For the chicken:
Preheat oven to 425°.
Brush the chicken with olive oil and season both sides with paprika, parsley, oregano, salt & pepper and place in a baking dish.
Pour sauce over chicken and bake for 15-20 minutes.
Remove from oven and add the spinach.
Let sit for a few minutes until the spinach wilts and then serve over noodles!

    OMG, we loved this recipe. Tasted and looked restaurant quality but better! Easy to put together, we made gnocchi and green beans to complete the dinner. Plenty for 3. Was concerned there wouldn't be enough sauce, but once the chicken baked and let out its juice, it was perfect. Thanks for sharing.
