A quick and easy healthy recipe idea that your kids will LOVE. You can choose to air-fry these or bake them in the oven.


Ingredients in coconut chicken tenders


You will need chicken breast. One chicken breast serves about two people. You will also need coconut flour and desiccated coconut. Use 2 beaten eggs. Salt and pepper to season and optionally, garlic powder.

Ingredients

  • 1 chicken breast
  • 1/4 cup coconut flour
  • 3/4 cups desiccated coconut
  • 2 eggs beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • Dried Parsley for garnish
Instructions

Start by cutting the chicken breast into pieces that resemble tenders.
Prepare 3 plates. Add the beaten eggs to one, the coconut flour, desiccated coconut, salt, pepper and garlic powder to the other and leave the final one for the chicken pieces.
Dip each chicken piece into the egg then coconut mixture.
Bake or air-fry these for 20 minutes, flipping them halfway. I air-fried them at 375°F/190°C, so they will require a higher temperature in the oven.
You can serve these with a dipping sauce, fries, roasted potatoes, salad or even on top of risotto!
