This year in honor of the Israeli Shavuot holiday known as the "Cheese Festival", I decided to pay tribute to my grandmother's burekas, who would only prepare them on this holiday in order to preserve their special flavor. The dough is very crispy, and you can make almost 100 units of burekas from just one kilo. The cheese filling is unique, ensuring that once you make it, you will not want to give it up. It is perfectly possible to prepare all the baking in advance, cool the burekas well, put them in the freezer and take them back out right before serving with only a light heating in the oven needed. They come out perfect, trust me.

Ingredients
dough:
  • 1 kg sifted flour (very important)
  • 1 bag of baking powder
  • 1/2 teaspoon salt
  • 200 g sour cream
  • 200 g white yogurt
  • 150 g white cheese (ski cheese in Israel)
  • 400 g butter
For the stuffing
  • 1 kg either salty or Bulgarian cheese
  • 4 eggs
Instructions
How to prepare:
To prepare the dough: mix all the ingredients for about 10 minutes until the dough is very smooth, and place it sealed in a bowl for at least 8 hours in the refrigerator, if possible, keep it for the whole night in the refrigerator.
Preheat the oven to 180 degrees
Preparation of the filling:
In a bowl grate the whole amount of cheese (there is a picture), add 4 scrambled eggs into the filling and mix until the filling is yellowish colored and set aside.
Preparation of the burekas
Divide the dough into at least five equal parts, remove one part onto the table, and keep the rest of the dough in the fridge, only taking the dough out when you use it.
It is important to leave the dough in the refrigerator when not using it.
Open the dough 3 mm thick with the help of a rolling pin and create medium sized circle shaped dough.
Place one spoon full of filling on each one and close to a half moon shape.
It is very important to tighten the burekas so that the filling does not come out while baking in the oven.
You can use a fork to close the edges of the burekas to make it beautiful.
Place on a pan with baking paper
Whisk the egg in a small bowl and smear on the burekas. Sprinkle sesame seeds on top and put in the oven for 20 minutes or until golden.
