Steak and eggs is a classic breakfast that I've seen and heard of everywhere for as long as I can remember. Yet for some reason, I have never ordered it, cooked it, or eaten it. I decided to make two sunny side up eggs and serve it with some potato wedges and steak topped with a delicious aromatic chimichurri sauce.


Feel free to add some veggies to your plate such as asparagus, grilled tomato, or maybe even a little side salad. The perfect balanced meal that works for breakfast, lunch, or dinner!

Ingredients

  • 3oz steak
  • 2 eggsS
  • 1 potato
  • 2 -4 tbsp seasoning mix of choice (recommend a greek or mediterranean style seasoning)
  • 1/4 cup olive oil
  • 1 green onion
  • 1 garlic clove
  • handful of fresh parsley
  • handful of fresh cilantro (optional)
Instructions

Preheat the oven to 425F then prepare the potato by cutting it into wedges or large cubes
Toss the cut potatoes with olive oil and seasoning, then place on a lined tray
Once the oven preheats, place the tray into the oven cooking them for 25 minutes and flipping halfway
While the potatoes cook, season the steak and heat up a skillet on low-medium heat
Add oil or butter to the pan then cook the steak to your preferred level of done-ness (3-4 minutes per side for medium rare)
Let the steak rest, then add more oil or butter and add your eggs - cooking them to your preferred level (approximately 5 minutes)
Once everything is ready to go, quickly combine the olive oil, fresh herbs and green onion, and garlic clove into a food processor or finely chop it all up and combine
Plate the food and add your chimichurri sauce

Tips
  • Add red chilies to the chimuchurri for some spice
