Pineapple Balsamic Pork Loin is that recipe you want on hand when you just. can’t. even.


When you’re tired, stressed and there are so many things going to happen with your day, this delicious recipe will save dinner AND your sanity.


Take five minutes to load the crock pot, at lunch time, and don’t think about it again, until dinner.


It’s a dump-it-in-the-crock-pot and forget it, perfect recipe. The pork is melt-in-your-mouth tender and has wonderful flavor. It even has a tiny kick from the red pepper flakes. The recipe has no added sugar and is Whole30 compliant, as well as Paleo.


I haven’t done it, yet, but I’m guessing you could also add baby potatoes and baby carrots and have the entire meal done, in one fell swoop! Winner, winner, forget about chicken dinner. This is uber scrumptious!


How to Make Pineapple Balsamic Pork Loin


Place all the ingredients, except the pork loin, into your crock pot and stir to combine.


Add the pork loin roast into the crock pot, with the fat cap facing up. You can give it a roll or two if you like, to coat it in the sauce, but be sure the fat cap is on top, when you close the slow cooker. It will help to make the meat tender and flavorful.

Set the crock pot on low and let the Pineapple Balsamic Pork Loin cook for 4-6 hours.


The pork should register an internal temperature of 145° when it’s done.


You want to check at the 4-hour point and then every 20-30 minutes after that. Every slow cooker is different. As you can see from my photos, I over-cooked mine a little.


It was still flavorful and delicious, but not as juicy as normal.


When you hit an internal temperature of 145°, remove the Pineapple Balsamic Pork Loin from the crock pot and allow it to rest on the platter for five minutes, before slicing. When you slice it, it will still be very lightly pink, but trust me, it’s perfectly done!

Ingredients

  • 2 1/2 – 3 lb pork loin roast
  • 2 (20 oz) cans pineapple chunks in own juice, no sugar added
  • 1 cup chicken broth (Be sure it’s compliant if doing Whole30.)
  • 1/2 cup balsamic vinegar
  • 1 Tablespoon *coconut aminos (or soy sauce if not Whole30)
  • 1 Tablespoon minced garlic
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
Instructions

Add all ingredients, except pork loin, to the crock pot.
Stir to thoroughly combine.
Immerse pork loin in the sauce, fat cap up.
Put the lid on slow cooker.
Set on low and cook for 4-6 hours, until internal temperature of the meat is 145°.
Remove loin from crock pot and allow to rest on a platter for 5 minutes, before slicing.
