The Easy Keto Palmini Lasagna Recipe

Are you as tired of watery zucchini noodle pasta as I am? I’ve finally found a solution!


Although zucchini is a great alternative, it tends to release too much water (especially when contained in a baking dish) so you end up with mushy “pasta”. Keto Palmini Lasagna has a much better consistency, think wheat noodles but tastier!


Lasagna day is hands down one of my favorites, the lasagna day prep however is not. With these keto palmini lasagna sheets, prep and clean-up are easy! The sheets are no-boil which means less prep and less clean-up … and honestly, whatever gets me to eating and enjoying my food faster, I am here for! This quick keto palmini lasagna recipe is the perfect solution to satisfy that pasta craving we all have every now and than.


Pro-Tip: If you prefer softer noodles, you can also boil your keto palmini lasagna sheets for 10 minutes then pat dry with a paper towel before adding them to your lasagna.


The Easy Keto Palmini Lasagna Recipe Ingredients


Ground beef: I know most recipes usually call for 1 pound, but we use 2 pounds of ground beef in our house because my husband prefers meatier lasagna and honestly, I can’t say I’m complaining!


Pasta Sauce: For this recipe, I used Rao’s Tomato Basil Pasta Sauce. If you are unfamiliar with Rao’s, they have a great selection of low-carb keto-friendly sauces.


Lasagna Sheets: I’m so glad to have found Keto Palmini Lasagna Sheets! Out of all of the keto-friendly pasta alternatives, I think these noodles are the best for baked pasta dishes.


Mozzarella Cheese: Mozzarella is a lasagna staple. So why fix what isn’t broken? I added 2 ½ cups of mozzarella. Make sure to leave enough to top!


Cottage Cheese: I know most people use ricotta cheese, but when I was growing up, my mom couldn’t find ricotta cheese at our small-town grocery store and would always use 1 pint of small curd cottage cheese instead. Ricotta lovers, don’t fret, you can sub for ricotta! If it’s your first time trying this method I’d love to know what you think in the comments.


Pro-Tip: If you’re following the recipe exactly, make sure to use a baking sheet to catch any possible spillage from the cheese and sauce!


How to make The Easy Keto Palmini Lasagna


Brown the ground beef. Brown ground beef in a large skillet until it crumbles and is no longer pink.


Stir in sauce. Stir sauce into the skillet of ground beef.

Spread meat sauce in a casserole dish. Spread ⅓ of meat sauce in a lightly greased casserole dish (11×7).


Start layering toppings. Place one layer of Palmini Noodles, then 1/3 of the mozzarella and cottage cheese.

Repeat. Repeat until you run out of ingredients.


Cover the dish and bake. Cover the dish either with a glass lid or aluminum foil and bake at 375 degrees for 45 minutes.

Remove foil and broil. Remove the foil and turn on the broiler just long enough to bubble the cheese on top.


Remove and cool. Remove from oven and allow to sit for 10 minutes before serving.

For lasagna sides, I like to stick to the classics – a great salad, my immediate (and quickest) go-to option.

Is store-bought pasta sauce keto?


In a lot of cases, no! Most store-bought pasta sauces have tons of added sugar to fight the acidity of the sauce. However, Rao’s Sauces have little to no added sugar making them the perfect low-carb sauce!

The pasta is made of heart of palm. With only 4g of carbs per serving, they’re a great low-carb alternative.


What does Palmini pasta taste like?


Palmini pasta is made from heart of palm. So, fresh out of the can, it just tastes like plain heart of palm. When cooked you barely tell they aren’t regular noodles! They can give you keto palmini lasagna a slight artichoke flavor (which for me is a plus!).
