    Ingredients

    • 2 cup pumpkin grated
    • 2 cups sugar
    • Juice and zest of 1 lemon
    • 1 tablespoon ginger grated
    • 1 teaspoon ground cinnamon or pumpkin pie spice
    • 1 1/2 cups water
    Instructions

    In a large heavy bottomed pot, combine pumpkin, sugar, ginger, cinnamon, lemon juice and zest.
    Add water and mix well.
    Bring to a rolling boil and cook on high heat for 15-20 minutes until the jam pulls away from the pot.
