  • 2 tbsp olive oil
  • 3 potatoes
  • 3 sweet potatoes
  • 4 zucchinis
  • 1/2 kg carrots
  • 4 tbsp sweet chili sauce
  • 125g filo pastry

Preheat the oven to 180 degrees Celsius (355 degrees Fahrenheit) and line a large baking tray with parchment paper.
Peel and shred the potatoes, sweet potatoes, zucchinis and carrots.
In a large frypan, heat up the oil on medium heat and add in all of the vegies. Stir until softened and cooked, this should take around 10 minutes. Remove from the heat.
Lay the filo sheets out and place three tablespoons worth of the vegetable mix in a line (vertically) 1/3rd into the pastry (see photo for further instruction). Roll the pastry to the end of the sheet.
Spray oil at each end and fold it the pastry in (around three finger spaces).
Place each pastry on the prepared baking sheet - they can be touching as they will not expand in the oven.
Brush the pastry with the egg wash and place in the oven.
Bake for around 15 minutes or until it starts to brown. Remove and serve hot.
