Ground Turkey and Potato Skillet
This yummy ground turkey and potato skillet is a one pan meal the whole family will love. Simply use a pound of your favorite ground meat, potatoes and whatever vegetables you have in your fridge or pantry. I used Turkey but you could substitute ground beef or Italian sausage. Canned vegetables like tomatoes or corn are easy to add and you can quickly chop up and toss those veggies that are about to go bad in tbt fridge. The best part of this meal is there is only one pan to clean!
Begin by adding 2 tablespoons of olive oil to a large pan and add one pound of ground turkey. Cook the turkey on medium/ high heat and
transfer it to a small bowl while you cook the rest of the ingredients.
Chop four large russet potatoes and add them to the pan with one chopped onion and two more tablespoons of olive oil. Cook until the onions and potato are browned.
Add the turkey back into the pan and stir. Add one can of corn and one can of diced tomatoes. Add one cup of chopped peppers and one cup of chopped celery. Add a teaspoon of salt, pepper and oregano.
Cook on low until the potatoes are soft. Serves 6.

- 1 pound ground meat
- 4 large potatoes
- 4 tablespoons of olive oil
- 1 can of corn
- 1 can of diced tomatoes
- 1 cup chopped bell peppers
- 1 cup chopped celery
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon oregano
Instructions
- In a large pan add two tablespoons of olive oil.
- cook the ground Turkey meat on med/ heat. Once fully cooked transfer it to a bowl and set aside
- In the same pan, add two more tablespoons of olive oil, add the chopped potatoes and onion. Cook until browned.
- Add the Turkey meat back in and add the corn and tomatoes.
- Stir in the chopped peppers and celery.
- Add salt, pepper and oregano.
- Cook on low/ medium heat until the potatoes are soft.
- Serves 6
Tips
- Try different types of ground meat. The serving size of one pound stays the same.
