Savory Sweet Potato Bites

Ingredients

  • 4 slices center cut bacon, cooked & diced
  • 4 tablespoons olive oil
  • 2 large sweet potatoes, sliced into rounds
  • Salt & pepper
  • 2 avocados
  • 2 tablespoons lime juice
  • ½ teaspoon smoked paprika
  • 1 tablespoon dry cilantro
Instructions

Preheat oven to 425 and line a baking sheet with foil
Slice potatoes
Brush foiled baking sheet with olive oil
Lay on a single layer of sweet potato rounds
Sprinkle with salt & pepper
Bake 20 minutes then flip and bake an additional 10 minutes
In a small bowl mash the avocado then stir in lime juice and paprika
Place a dollop of avocado mix on each sweet potato round
Sprinkle on bacon and cilantro
Serve and enjoy!

    Okay, you get MAJOR, MAJOR points here! I can never leave any recipe alone, and I didn't here, but I don't think that what I did took away from your recipe which had THE BEST bite, like actual mouth-feel and the slight resistance from the sweet potato slice, and then that overnote of smoky bacon?!?! #swoon!!! What I did differently was to add a sprinkle of cumin and a diced Roma tomato to the avocado mixture. The other thing was, I took low-carb tortillas and cut them into circles (nothing fancy, just used my kitchen scissors!), roughly the size of my sweet potato slices. I baked those JUST to serve as a vessel for the sweet potato. When I went to bite into the sweet potato on its own, it rather folded in on me, rather than serve as a "crostini," (maybe I baked it too long??), so I thought the tortillas, if I baked them, would be a little sturdier. They worked GREAT, were low carb, so didn't take away from this being keto-friendly, and added no flavor that would detract from the incredible balance of sweet, from the potato, fruity from the avocado, and the smokiness of the bacon. It absolutely dances on the tongue!!! THANK YOU for posting this - I would have never thought of it, and now that I know, I cannot un-know!!! This is gonna be a generational favorite!!! I guarantee it, since my kids have now DEVOURED it!!! Blessings, ~Chrissie
