Strawberries are everywhere this time of year, and it’s perfect to eat them in the strawberry spoon cake recipe! This easy strawberry dessert recipe only needs ingredients that you probably already have on hand! This is so easy to throw together that I’m sure my 13 year old daughter could easily make this. This tastes very similar to strawberry shortcake and needs ice cream or whipped cream to go with it. I’m sure you could also substitute in different berries like blueberries or raspberries if you have those on hand instead.

Ingredients Needed For This Strawberry Spoon Cake:

Servings: 6

Prep: 15 minutes| Cook Time: 20 minutes | Total Time: 35 minutes

Ingredients:

2 cups strawberries sliced

⅔ cup brown sugar

1 cup all purpose flour

½ c 2% milk

½ cup butter melted plus more for greasing

1 tsp baking soda

½ tsp salt

Notes:

*You may substitute coconut sugar for brown sugar

  1. Preheat the oven to 350
  2. Grease a 9 inch pie plate and set aside

3. Add 2 cups sliced strawberries and all of the brown sugar to a medium bowl and mix until strawberries are coated

4. Lightly smash strawberries with back of fork and let sit for 10 minutes

5. Add flour, milk, melted butter, baking soda, and salt to a medium bowl and mix until well incorporated

    Could you use nut flour almond for example

      I would try with almond flour and add 2 eggs. Eggs hold almond flour together since it has no gluten. It will be a tad more batter like but should bake fine with a few minutes additional bake time if needed. Substitute a sweetener for the sugar and you’d have a low carb dessert
