Mango Boba Almond Milk

This is that one recipe which I always wanted to try but due to some or the other work constraints I forget. So recently I was going through my Instagram page and I saw varieties of boba Milk recipe using different seasonal fruits. So this made me make my version of Mango Boba Almond Milk and I can't wait to share with you all. I thought of giving a try to do it with mangoes as it is the mango season.

The mango boba pearls are fruity, and you can never stop having them. They are a bit delicate and tricky to make but at the end its totally worth it. These mango tapioca pearls are chewy and have fresh mango flavours in it. It's a complete summer bliss drink!

This mango boba milk is refreshing & easy to make. If you're a fan of boba Milk or boba tea, then this one's for you!

Ingredients
For Mango Boba Pearls
  • 4tbsp Mango puree
  • 8 tbsp tapioca flour
  • 1/2 cup sugar syrup
For the Mango Almond Milk
  • 1/4 cup mango puree
  • 2 Cup Almond Milk
  • 2 tbsp sugar
  • Ice as required
Instructions
For Mango Boba Pearls
In a large bowl, mix mango puree & tapioca flour together. Add more tapioca flour as required to make a smooth non sticky dough.
Roll the dough into long logs and cut them into small portions.
Make small boba pearls from each portion by rolling the dough between your palms.
Now, boil 4 glasses of water and add mango boba pearls.
Cook them in boiling water till they become shiny and somewhat translucent or till they began to¹ float on water. This will take around 5 to 7 mins.
Strain them and transfer into an ice bath. It helps to enhance the colour of the mango boba pearls.
Again strain the boba pearls and keep them in sugar syrup to prevent sticking. 
For Mango Almond Milk
Blend together the remaining mango puree, sugar and almond milk to make Mango Almond Milk.
In a glass, layer the boba pearls with some ice cubes and pour mango almond milk.
Enjoy your mango boba almond milk chilled!
Tips
  • If you are beginner, take little amount of both tapioca flour and mango puree. Mix it well. Microwave this mixture for 1 min. (It helps to bind the mixture). You will see that the mixture will thicken. Then add remaining tapioca flour as required to make a smooth non sticky dough.
  • If you want, you could add 1-2 drops of yellow food colour(optional).
  • You can also add some chunks of fresh mangoes.
