Hello Foodie friends,


Spring is just around the corner, and I am ready for fresh and easy saad recipes.


Come with me as we make the “Viral tuna salad”.

This high-protein salad is rich in nutrients and packed with flavor. It is crunchy and tasty and for sure a satisfying dish. The rich flavor of the olive oil in the simple dijon vinaigrette elevates the taste of this salad. Enjoy by itself or over toast. It is so delish, now who is making this salad!


Ingredients:

1 can of tuna

1/2 cup of cooked chickpeas

1/4 cup of preferred nuts( slivered almonds)

2 tbsp of pickled onions

3 Tbsp of chopped parsley

1 tomato chopped into cubes

1/2 of a cucumber cut into cubes

1 Tbsp of capers

1/2 tsp of dijon mustard

1 tsp of Extra virgin olive oil @garcia

Optional ( 1 cup of brown rice or wild rice).


Dijon Vinaigrette

1 tsp of dijon mustard

1 Tbsp of apple cider vinegar

2 Tbsp of Extra Virgin olive oil

Salt and pepper


In a small bowl whisk all the ingredients for the vinaigrette and set aside

In a large salad bowl, add the tuna (drained) the tsp of dijon mustard, olive oil, salt and pepper to taste and mash. Then add the garbanzo, capers, tomatoes, cucumber, almonds, parsley and pickled onions. Add the dressing and mix it all together. Ready to enjoy by itself, over toast, in a tortilla wrap or lettuce wedge.

  • You may add 1 cup of wild rice or brown rice to make it more hearty and a meal by itself.
