Pollo Guisado
Pollo Guisado (Chicken Stew) in Puerto Rico is a hearty dish that is made in many Puerto Rican homes. This is a dish packed with flavorful seasonings, fresh herbs, and vegetables. You can make this with boneless chicken or bone-in chicken, but bone-in chicken is the best way to make it because it helps to release these nutrients into the dish during the cooking process.
Here is my simple and flavorful recipe!
Ingredients
Seasoning for Chicken
5 pieces of boneless or bone-in chicken
1/2 teaspoon of adobo
1/2 teaspoon of salt
1/2 teaspoon of pepper
Ingredients
1/2 of red pepper, chopped
1/2 of yellow pepper, chopped
2 cloves of garlic, minced
1/2 white onion, chopped
3 small square-cut potatoes
1/2 can of tomato sauce
1 tablespoon of sofrito
1 sachet of Sazon with color
1 teaspoon of oregano
1 teaspoon of adobo
1 sachet of chicken powdered
1 tablespoon of olive oil
1/2 a lemon juice
Salt and pepper to taste
2 corn cobs chopped in 4
2 cups of water
1/2 cup of cilantro and more for garnish
Instructions for Chicken
Wash the chicken, and cut it into cubes. Add the lemon juice, adobo, salt, and pepper, and let it rest for 30 minutes.
Instructions
Brown the chicken in a deep pan or pot, once the chicken is browned remove and set aside.
In the same pot, heat the olive oil, sliced peppers, and onions. When the peppers soften and the onion is translucent, add tomato sauce, sofrito, garlic, and dry seasoning.
Now you can add the chicken and 2 cups of water. If it’s too thick you can add 1/2 cup more. You can also add more oregano, salt, and pepper. (optional)
Add the cut potatoes, carrots, and corn. Cook for 10-15 minutes more or until the potatoes are soft and the corn is done. Add cilantro and cook for 3-4 minutes covered.
Serve with white or yellow rice, add more cilantro for garnish!
