Caprese Grilled Cheese

Grilled cheese is such a tasty and filling recipe. Most people just make it by using a slice of American cheese between two pieces of white bread. You can still do that and it can still be delicious.


But, this caprese grilled cheese elevates that sandwich.


It uses sourdough bread (which either you or a friend started making during the pandemic and you or your friend is still making today). If you don't have homemade sourdough bread, that's fine. Store bought works.


Then, add the other elements of a caprese salad: mozzarella cheese, tomatoes, and basil (but, in this case, it's in the form of basil pesto).

Ingredients

  • 2 slices of sourdough bread
  • 1 oz. mozzarella cheese
  • 2 slices Roma tomato
  • 2 tablespoons pesto
  • 1 tablespoon butter
Instructions

Cut two slices of sourdough bread.
Shred the cheese.
Slice the tomato.
Heat the butter in a pan.
Add a slice of the bread to the pan.
Spread half the pesto on the bread.
Add the cheese, tomato, more pesto, and the other piece of bread.
Cook, covered, for four minutes.
Flip the sandwich.
Cook, covered, another four minutes.
Tips
  • This recipe calls for sourdough bread. If you don't have sourdough bread available, or you just don't like it, you can go ahead and use your favorite bread. Any bread will work to make the sandwich, so just make it according to your preferences.
