Brisket Quesadilla On A Blackstone Griddle is such an easy leftover brisket dinner or lunch! This can be made with smoked brisket or brisket made in the house!



Brisket Quesadilla Ingredients:

  • Flour Tortillas
  • Shredded Smoked Brisket
  • Shredded Cheese
  • BBQ Sauce



How To Make Brisket Quesadilla On Blackstone Griddle:




Prepare your Blackstone Griddle with a fresh bit of oil, if you are not sure How To Maintain Your Blackstone Griddle please check out this post -> here


Shred or cut your brisket to put into the quesadilla, I microwaved mine for about 30 seconds since it had been in the fridge overnight from being cooked the night before.

Spread out your tortilla and sprinkle with cheese, then top the cheese with brisket.

Top with more cheese and then drizzle with some bbq sauce.

Fold the tortilla in half around the meat and cheese.

Fire up your Blackstone to low-medium heat and add a bit of oil if necessary.

Once your griddle is warm place the folded in half tortilla onto the griddle and allow to cook.


When the side of the tortilla on the griddle is starting to brown flip the tortilla over to cook the other side.


Remove and serve when the other side is cooked as well.

Remove and serve!!
