Bacon, Fig & Gruyere Grilled Cheese

My kids approve of the classic grilled cheese sandwich, but if I offered them a bacon, fig and gruyere grilled cheese, they would definitely run away from me screaming. This is probably a grilled cheese recipes for adults only. And that's ok, more for me after all!


Cheddar or American cheese typically serves as the base for a grilled cheese sandwich. However, I love experimenting with different cheeses for truly spectacular grilled cheeses. The nutty, rich and gooey flavor of gruyere pairs wonderfully with fruits. I think fig complements gruyere the best. To add the finishing touch, the salty, crispy bacon adds a delectable bite to the sandwich's mouthful.

Ingredients

  • 2 slices of sourdough or rustic french bread
  • 1 Tbsp salted butter
  • 2-3 Tbsps of fig jam
  • 2-3 slices of cooked bacon
  • 2 oz shredded gruyere cheese
Instructions

Spread 1/2 tablespoon butter on one side of each bread slice. Turn one slice over and spread the its other side with the fig jam.
Heat a medium or large nonstick skillet on low heat. Place the slice with fig jam, butter side down in the skillet. Top with bacon and then layer shredded gruyere cheese on top. Top with second buttered bread slice, butter side up. Cover and cook until lightly browned, about 2-3 minutes. Flip the sandwich over carefully, cover and cook for another 2 minutes or so until lightly browned. Cut in half and serve immediately.
