Vietnamese Noodle Salad

This recipe is the perfect warm weather salad that is filling, nutritious, and delicious. I know it's technically winter but this can be cozy too if you warm up the noodles and beef. My whole family was a big fan including my toddler. I meal prepped a really big batch of this salad and ate it throughout an entire week. I also made a homemade soy sesame sauce which turned out to be the perfect dressing for this salad and a great source of fermented foods. I would highly recommend this recipe to anyone!


I would also recommend adding an avocado for a healthy fat but mine unfortunately were too browned to use this time.

Ingredients
Vietnamese Noodle Salad
  • 1 cup chopped cabbage (red/green)
  • 1/2 cup sliced cucumber
  • 3/4 cup cooked white rice
  • 2 tbsp chopped cilantro
  • 6 oz cooked beef
  • 2 tbsp bulgogi sauce
Soy Sesame Sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp miso paste
  • 1 tsp soy sauce
  • 1 tsp honey
Instructions
Vietnamese Noodle Salad
In a small bowl, mix beef and bulgogi sauce until well coated
In a small dish, mix rice vinegar, sesame oil, miso paste, soy sauce, and honey until incorporated to make the soy sesame sauce
Divide remaining ingredients in half, in 2 separate salad bowls, first add rice, then cabbage and cucumbers, then beef, and top with cilantro and soy sesame sauce
Tips
  • If sauce is too thick, add a little water to thin it out
  • Feel free to add more vegetables
