The BEST Pineapple Fried Rice Recipe

This Thai pineapple fried rice is one of my favorite recipes for busy days! It’s super easy to make, healthy, and so yummy. Plus, it’s SO colorful! Eating this pineapple rice will be like taking a trip to Thailand!

My family loves thai food and this is our go to easy recipe that we cook every month. If you like pineapple then try this! Thai food so different from other cuisines is its use of contrasting flavors. Thai food often pairs hot spices with sweet, light citrus flavors like lime and mango.

I am going to substitute cauliflower for the rice. I will also use garlic, ginger, and soy sauce with a little monkfruit.
