If you like pinacolada and getting caught in the rain, then your going to LOVE this recipe!


Think normal eggy friend rice, but with a twist! Add in some fresh sweet pineapple chunks, and make it creamy with some coconut milk, and you’ve got pineapple fried rice!


This on its own, is an excellent dish, which you won’t want to stop eating. However I decided to up it a level and combine it with some fiesty jerk flavoured tofu chunks. The Caribbean jerk marinade goes so perfectly with the creamy coconut and sweet fried rice!


It really is a match made in heaven!

Ingredients
Pineapple fried rice
  • 1 pineapple
  • 1/2 cup brown rice
  • 1/2 red onion
  • 2 cloves of garlic
  • 2 eggs
  • 1/2 pepper
  • 1 spring onion
  • handful peas
  • salt and pepper
  • 1 tbsp rice wine vinegar
Jerk tofu skewers
  • 1 pack of tofu: press and cut into equal cubes
  • Marinade in: 2 tbsp soy sauce, 1 tsp honey, 1 tsp rice wine vinegar, 1/2 tsp paprika, 1 tsp cumin, 1/2 tsp cinnamon, 1/2 tsp allspice, 1/4 tsp nutmeg, 1/2 lime juices, 1/2 tsp dried thyme, 1 tsp brown sugar
Instructions

- Start by cutting your pineapple in half, then score the middle leaving a 1/2 cm rim around the edge. Remove all the pineapple into chunks and place in a bowl.
- Pre cook rice to packet instructions. Add peas with rice and cook for final 5 mins. 
- Finely chop onion and soften in a pan. Repeat with garlic and pepper. Add vinegar, salt and pepper and cook for a few minutes 
- Remove veg from pan and place in a bowl. Now crack in your eggs and cook until start to scramble. 
- Add back in your vegetables and rice and stir. Finely chop your spring onion and add to the mix. Add coconut milk, turn up heat and let rice fry up a little.
- Serve rice mix back in the cut out pineapple half, with the skewers on top. 
For the skewers
Press your tofu to remove any water and then cut into equal 1cm cubes. Then marinade the cubes in marinade ingredients for at least 30 minutes. Longer the better.
Put your cubes of tofu onto skewers equally and bake in the oven for approx 15 mins on 180c turning regularly. Any remaining marinade keep a side and add to the tofu half way through cooking.
