Forget the canned alfredo sauce! This made from scratch shrimp alfredo is so easy and delicious, will you never reach for another can of alfredo sauce again.

This shrimp alfredo is easy enough for a weeknight but special enough for a weekend or entertaining friends and family.

Sautéing the shrimp in butter and garlic creates a delicious base flavor for this dish.

The alfredo sauce is made by simply combining white wine, heavy cream, cream cheese, milk, and parmesan cheese. The cream cheese and parmesan cheese help to thicken and create a rich and creamy sauce which would be delicious for shrimp, chicken or plain fettuccini alfredo.

Serve with parmesan cheese and a glass of white wine for a perfectly elegant meal.

Ingredients

  • 8 ounces uncooked fettuccine
  • 1 pound frozen shrimp, thawed & peeled, with tails off
  • 2 tablespoons butter
  • 4 light ounces cream cheese softened at room temperature & cut into smaller pieces
  • 1/2 cup heavy whipping cream
  • 1/4 cup dry white wine (I used pinot grigio); may substitute chicken broth
  • 1/2 cup low fat milk
  • 2 large cloves garlic minced
  • 1 cup freshly grated parmesan cheese
  • Salt & pepper to taste
Instructions

Bring a large pot of water to a boil, add fettuccini and a dash of salt, and cook until al dente. Drain fettuccini and set to the side.
Meanwhile, add the butter and garlic to a large skillet over medium heat. Once butter is melted, add shrimp and cook stirring occasionally for about 3-5 minutes or until shrimp is pink in color. Remove shrimp and set aside.
Turn the heat down to medium low, and add the white wine, heavy cream, milk, and cream cheese. Stir until cream cheese is melted, and well incorporated into the sauce.
Bring the sauce to a soft bubble for about 5 minutes and then add the parmesan cheese and stir until combined.
Add the shrimp back to the sauce and cook for about 1 minute. Season with salt and pepper.
Toss sauce with fettuccini, sprinkle with parmesan cheese if desired, and enjoy!
