Ravioli With Asparagus & Tomatoes

Create a delish gourmet tasting dish using a package of store bought ravioli, paired with asparagus and tomatoes! This dish is a huge hit, even for the kids and an easy make for busy weeknight dinners!


We love pasta at my house! I mean, let's face it, who doesn't? During the week I'm always on the hunt for easy recipes that don't take a long time to make...and are healthy! My kids aren't always the biggest fans of vegetables, so when I find a vegetable that they will eat, you know I make it as many different ways as I can possibly think of!

That vegetable is asparagus for our family. Oddly, everyone likes it! Yay! So, in an effort to combine several ingredients that we like, I put together this ravioli asparagus dish (and topped it with tomatoes for me!). Finish the dish off with shaved Parmesan cheese to make it even more tasty!

I originally was inspired by this recipe I found on Pinterest from Cooking Classy. My family loves ravioli and asparagus...and I love tomatoes! I hopped on my phone and placed an order using my Walmart Grocery Pickup and in a couple of hours everything I needed for this recipe was ready!

Simply sauté and boil water...that's all there is to it!

This dish is so easy to make and absolutely delicious! You can change up the vegetables to broccoli or green or red peppers if you prefer! Remember, top it off with shaved Parmesan cheese to make it even more tasty!

Ingredients

  • 1 package cheese ravioli, store bought
  • 1 grouping asparagus, ends trimmed off
  • 1 package cherry or grape tomatoes
  • fresh basil, to garnish
  • Parmesan cheese, optional
Instructions

Bring a large pot of water to boil.
Sautéed some asparagus in extra virgin olive oil and minced garlic.
Tossed in halved tomatoes. Cook for 1 minute extra. Salt & pepper to taste.
Keep asparagus and tomatoes warm wile ravioli cooks according to package directions.
Drain ravioli and toss into asparagus and tomatoes pan.
Garnish with chopped basil and shredded parmesan cheese.
Serve and enjoy!
