Ingredients

  • 14 oz pre-cooked beans (borlotti or cannellini)
  • 7 oz small shaped pasta (I used ditali)
  • 14 oz tomato passata
  • 1 onion
  • 1 carrot
  • 1 celery stalk
  • 1 tbsp tomato paste
  • Red pepper flakes
  • 2 bay leaves
  • Olive oil
  • Salt
  • 2 cups water
  • Parmesan
Instructions

In a large pot, sauté finely chopped celery, carrot, and onion with a bit of olive oil. Optionally, add some red pepper flakes for extra flavor.
Add the tomato passata, bay leaves, and salt. Cook for a few minutes.
Add the beans and tomato paste, ensuring they are well flavored.
Remove the bay leaves and pour in 2 cups of water in the same pot.
Once the water boils, add the pasta and cook it according to package instructions.
Adjust the seasoning with salt and, if it becomes too dry, add some hot water.
Once ready, serve the pasta and beans in a rustic bowl.
