It’s delicious, nutritious and so much better for you than a normal creamy pasta sauce. What more could you want?!


This dish already has 2 of our 5 a day (fruit and veg) in it, but I often quite like to serve it with a little crunchy green veg on the side. Sometimes I may blanch some tender stem broccoli, or roast some crispy kale, or simply just cook some peas for the side.


The sauce created a gorgeous deep autumnal orangy colour, perfect for this drizzly weather! You honestly need to try this heartwarming recipe this autumn!

Ingredients

  • What you’ll need..
  • 1 butternut squash
  • 1/2 red onion
  • 3 large cloves of garlic
  • 4/5 leaves of fresh sage
  • Salt and pepper for seasoning
  • 1 tsp creme fresh
  • Parmesan shavings
  • (Pasta water) 
  • Pasta of choice
Instructions

What to do..
Peel and cut your butternut squash into small cubes. Roast in the air fryer at 180 for approx 25mins. 
Take half of your cubes and save in a bowl. And the other half put in a blender. 
Meanwhile finely cut your onion and garlic and soften in a pan. Add to your blender.
Add in your cream fresh, Parmesan, finely cut sage and some salt and pepper. 
Now start to cook your pasta. Take 1/2 mug pasta water whilst cooking and add to the blender. Blitz until smooth. Put sauce in a small saucepan and keep heated until serving. Add a little more pasta water if you need it any smoother.
Re heat your extra butternut squash cubes in the air fryer until crisp. When your pasta is ready serve in your sauce, and springy your butternut squash cubes on top
