I don’t know about you, but I’m more than ready for Spring. We are currently building a front deck at our house and I can’t wait to add fancy Anderonack chairs and a stunning rug and enjoy all that Spring has to offer.

I’m excited about all the outdoor DIY projects, gardening, building a new fence and we are finally painting our house. We picked an adorable Nantucket blue and I can’t wait to give our country farmhouse a much-needed refresh.

  • Prep time: 5 Minutes Cook time: 15 Minutes Total time: 20 min

Ingredients

  • 1- box penne pasta
  • 1/2- pound bacon chopped and cooked
  • 1/2- cup chopped white onion
  • 2- cups heavy cream
  • 2- cups freshly grated parmesan
  • 1-to mato chopped, or 1-cup cherry tomatoes
  • 1/4- cup fresh lemon juice
  • 2- cups arugula
  • Himalayan sea salt and black pepper
Instructions

Cook the penne pasta according to package directions
Saute the chopped bacon and white onion together until cooked thoroughly
Add the heavy cream and 1-cup parmesan to the bacon and onion and saute on low heat for 5-minutes or until the sauce starts to thicken.
Next, add in the chopped tomatoes
Add in the fresh lemon juice
Toss in the penne pasta and combine
Toss in the arugula
Add more parmesan and combine.
Serve immediately
Garnish with Himalayan sea salt and freshly ground black pepper
