Kiwi and Peanut Tropical Oats

After a bit of a summer hiatus away from porridge, this month saw me slowly getting back into my winter traditions. The kitchen was bitterly cold this morning in London - even though its only September! I like to think of this porridge as something which can bridge the gap between summer and autumn. It has all the comfort and warmth that porridge gives, but keeps it feeling a little summery and tropical with kiwi and peanuts. This recipe would work with any other tropical fruits you feel like instead - I think that trying with mango with be next on my list!

Ingredients

  • 100g/ 1 CUP Oats 
  • 250-350ml/ 1.5 CUPS Milk or Water (or 50/50) - I think coconut milk works really well with the flavours here
  • Pinch of salt 
  • 2 tsp Honey 
  • 1 Kiwi, peeled and Sliced
  • Handful of salted peanuts, chopped
Instructions

Make the porridge base by mixing the oats with the milk, 1 tsp of the honey and a small pinch of salt and heat over a low heat for 10-15 minutes until thick and creamy, adding a little more milk or water if needed.
Spoon the porridge into bowls, add the sliced kiwi then sprinkle over the peanuts and drizzle the honey.
