Vegan patties perfect for batch-cooking and have as quick lunches for weaning children! Perfect for BLW (baby-led weaning)!

These patties are ones you will want to batch-make and freeze, ready for those quick lunches whilst homeschooling, served alongside a salad or some other veg.

I shared before a recipe with millet and you guys seemed to love the idea of incorporating lesser used grains in your and your kids’ diets. You will find dried millet in most big supermarkets, and it’s just so good both from a nutritional and a texture point of view to introduce your kids to more grains rather than just wheat and rice all the time.

And these patties are such a good balance of carb and protein, so will fill you and them up and keep you full for a few hours.

Ingredients

  •  2 3/4 cups millet
  • 1/2 cup dry red lentil
  • 1 potato
  • ½ Onion, finely chopped
  • Punnet fresh parley
  • 1 Tsp turmeric
  • 1 Tsp chives
  • Vegan Mayo or lemony yogurt for dipping
Instructions

Put the millet and lentils in a pot and cover with boiling water. Let them boil for around half an hour, adding extra water if necessary.
Meanwhile boil or steam the potato and mash it.
Drain the millet and lentils and mix in a bowl with the potato, onion and spices. Season with salt (only if making for children over 1).
Take a big tablespoon of the mixture and roll it between your hands into a ball and then flatten gently into patties. If the mixture is too soft add some flour or chickpea flour to make it easier to shape.
Bake in the oven for 15-20 minutes at 356°F.
Serve hot or cold with either some Mayo or some lemony yogurt on the side for dipping. Little tip: add also a little garlic powder to your yogurt for more flavour!
