Pineapple Shrimp Tostadas

Start these Pineapple Shrimp Tostadas by adding all of your Pineapple Sauce ingredients into your blender. Blend until the sauce is smooth. Next go ahead and chop up your garlic, red onion, and green onion. Take a large saute pan and place it over medium heat. Add your two table spoons of butter and let melt in the pan. Toss in your garlic and red onion, maybe a pinch of salt as well. Cook for about 3-5 minutes. Your whole house should be fragrant at this point.

Make sure your shrimps are thawed and patted dry and add to the pan with the green onion. Let them cook for minutes mixing every so often. After about 5 minutes pour in your Pineapple Sauce and torn up parsley. Stir the contents of the pan and reduce your flame to low so you have a nice simmer with the Pineapple Sauce. Let cook for about 5 minutes. 

While they are cooking prepare your corn tortillas and place over a flame to make them nice and crisp. We usually oil a grate on our stove and let the tortilla sit on top to char. Once they are nice and charred remove from the flame. Mix the shrimp, at this point the sauce should be thick and sticking to the shrimp. Take the shrimp off the heat and serve on top of the corn tortilla, enjoy!

  • 2 cups cubed pineapple

  • 1 tbsp chili garlic sauce
  • 2 tsp packed chopped parsley
Tostada Ingredients
  • 2 tbsp butter
  • 2 garlic cloves minced
  • ¼ cup chopped red onion
  • 2 tbsp minced green onion
  • 1 lb deveined and peeled shrimp
  • small corn tortillas
