Summer Lobster Rolls
Hello Friends,
Nothing says summer than to enjoy yummy seafood on a hot summer day. I usually love to eat fish or a shrimp dish for dinner, after a fun day at the beach... my other favorite are my new hack to perfect delicious hassle-free lobster roll. I promise, this will be on your next picnic basket.
Some may prefer to get the fresh lobster, cook it at home to get most yummy sweet meat to make any dish. But when I found the best Maine lobster meat in a package at Whole foods, I was thrilled. No hassle making any lobster dish.
With just a few ingredients, you will make the most spectacular " Lobster Roll"
A little bit of mayonnaise, finely diced celery and chopped chives on top is all you need on a toasted buttery brioche bun.
Luke's Maine lobster mean to the rescue for a hassle free lobster roll at home.

Recipe details
Ingredients
- 3 Packages of Luke's Maine Lobster meat
- 6 brioche buns
- 3 tablespoons of avocado mayonnaise
- 1 lemon
- 3 TBSP of finely diced celery
- 1 finely chopped green onion or chives
- 6 butter lettuce wedges
- Butter for the brioche buns
Instructions
- Defrost the lobster meat and drain. In a large bowl mix the mayonnaise, celery and chives then toss in the lobster meat and gently toss all ingredients together. Toast the buns lightly, then add a wedge of butter lettuce and fill in with the lobster mix . ... you may add a little of their seasoning mix and melted butter on top.
