Asparagus and Feta Quiche

Brunch has always been one of my favorite things to do on the weekends so this past weekend I decided to make brunch for Phillip and I at home. This Asparagus and Feta Quiche was a crowd favorite (meaning Phillip, he is the only one here). A quiche can be made so many ways, it’s endless. You can’t really mess this up. So give it a try!


A quiche of any kind is my go-to for any at home brunch or vacation breakfast. Think about it, anytime you have friends coming over or on vacation you aren’t trying to reinvent the wheel with eggs Benedict or gourmet stuffed french toast. You want to prep something in under 15 minutes and pop it in the oven so you can enjoy those mimosas with your friends while you wait for your meal to cook!


I used to make a mean broccoli and cheddar quiche for years. However, typically the frozen broccoli florets were always just a little to soggy for my liking. Fresh broccoli is a great way to solve this problem but to be honest my lazy side is coming out here when I say chopping up broccoli leaves such a mess. There are always broccoli pieces all over the counters and somehow on the floor too. That’s when the Asparagus and Feta Quiche came to life.

It definitely takes longer to make but it would be well worth it. Or try this out for just yourself and not feel the need to make a pound of bacon. Ingredients

  • 6 eggs
  • 7 asparagus stalks
  • 5 cherry tomatoes
  • ¼ cup crumbled feta
  • ½ cup milk
  • 1 tsp cayenne pepper
  • 1 tsp salt
  • 1 tsp pepper
  • 1 pie crust
Instructions

Preheat oven to 375°
Take a pie dish and butter the bottom and sides
Lay the crust in the dish and lightly press the crust so there are no air pockets on the bottom or sides
Bake crust for 15 minutes
Chop asparagus and tomatoes up but remove the seeds from the tomatoes
In a mixing bow add eggs, milk, cayenne pepper, salt, pepper and mix well
Add asparagus, tomatoes, and feta. Lightly mix this into the eggs.
Remove pie dish from the oven and pour egg mixture into the pan and bake for 30 minutes or until eggs are fully cooked
Let cool 3 minutes and slice to serve
