Egg and Cheese Frittata

We have some long busy days, by the time we get home the last thing I feel like doing is cooking. This is a easy, quick, and nutritious dish that can also use up some of those leftovers you have in the fridge.

Preheat oven to 425*In a 9 - 12'' oven safe saute` pan over medium-high heat, cook the Broccoli in Olive Oil until soft and very lightly browned, about 5 - 8 minutes. Add Garlic and saute` another 2 - 3 minutes. 

Meanwhile, whisk eggs with Parmesan, Mozzarella, Ham and Pepper. Set aside.After Broccoli/Garlic is soft and cooked through, add egg/cheese mixture and let cook 30 seconds over high heat. Transfer the pan to the heated oven and let the Frittata cook until the eggs are just set, about 25 - 30 minutes.  

Remove the pan from the oven and turn the Frittata out with a rubber spatula onto a serving plate. Cut it like a pie and serve it up! Protein, veggies, dairy ~ Dinner's done!

Ingredients

  • Ham, 2 handfuls, diced
  • Eggs, 12
  • Broccoli, 3 cups, cut up
  • Garlic, 2 cloves, minced
  • Parmesan Cheese, 2 1/2 Tablespoons, grated
  • Mozzarella Cheese, 1 cup, grated
  • Black Pepper, 1/4 Teaspoon, ground
  • Olive Oil, 1 Tablespoon
Tips
  • You can use frozen Broccoli instead of fresh
  • I keep a jar of minced Garlic in the fridge to save time. Equivalent measurements on on the side.
  • I grate all my cheese chunks when I get home from purchasing them, place them in zipper freezer bags, label and keep in freezer. Time saver and they only take minutes to thaw.
