Looking for a quick and delicious way to use up the last of your summer basil? Look no further than this wonderful pesto recipe. I grow fresh basil every summer and it creates an abundance of pesto leaves. Fresh pesto helps keep the growth at bay while creating an opportunity for one of the simplest and most flavorful sauces: pesto! The addition of spinach makes it a fantastic way to incorporate extra greens while retaining the freshness of the basil. This is a one-tool recipe that can easily be blended in a food processor or mortar and pestle. My favorite way to serve pesto is over top freshly cooked pasta, but it makes for a great spread on sandwiches too.

Ingredients

  • 1 cup spinach
  • 1/2 cup fresh basil
  • 3-4 tablespoons extra virgin olive oil
  • 2 tablespoons toasted pine nuts
  • 1 tablespoon lemon juice
  • Salt and pepper
  • 1/4 cup freshly grated Parmigiano Reggiano cheese
Instructions

Combine all ingredients except cheese in a food processor. Pesto will be a somewhat thin and slightly chunky consistency.
Serve with your dish of choice!
