Today, we’re making Spinach Dip Cups!

It’s Day 10 in our 12 Days of Dips series. And today, we’re letting the grocery store do all the heavy lifting for these 4 ingredient bites that are as simple as they are delish. We’re turning dip into an on the go item by stuffing it in little pastry shells perfect for transporting the tangy filling.

Let’s talk about the dip. We’re going to start with a store bought spinach dip. You can typically find these premade dips in containers near the deli section of the grocery store. Aldi has an excellent spinach dip. Walmart has a really great one too. Regardless of what brand you choose, we’re going to add two special ingredients to elevate the dip to the next level.


We’ll get a good scoop of dip into a mixing bowl, and to it we’ll add some dried dill and some crumbled feta. Mix it all together, and we’re halfway done. When it comes to feta, I prefer to buy a block and crumble it myself. It’s not only cheaper to do it that way but the flavor is much better when it’s freshly crumbled. It’s a no brainer, really.

Once our dip is all mixed up, we’re going to stuff it in some store bought phyllo shells. You can typically find phyllo shells in the frozen section of the grocery store near the puff pastry. They’re so easy to work with. You don’t need to thaw them before using them either. Just arrange them on a parchment paper lined baking sheet, spoon the dip mix evenly into each shell, and pop them in the oven for just a couple minutes to get flaky and golden. That’s all there is to it!

These walking spinach dip cups almost give a spanakopita vibe thanks to the phyllo, spinach, dill, feta combination. They’re warm and creamy and tangy and savory and just so simply delicious. And while these are intended to be a holiday appetizer, they are an excellent bite on a brunch table too. They pair perfectly with some scrambled eggs.


Now, there are only 15 shells that typically come in the pack of phyllo shells, but you’ll have way more remaining spinach dip than that. That makes it so this recipe is easily doubled or even tripled simply by purchasing a couple more boxes of shells. I know you love it when I give you options.

Ingredients

  • 1 box (1.9 oz) phyllo shells
  • ½ cup prepared spinach dip
  • ½ tsp dried dill
  • ¼ cup (heaping) crumbled feta
Instructions

Preheat oven to 350 degrees. Line a baking sheet with parchment paper. Arrange phyllo shells in a single layer on prepared baking sheet. Set aside.
To a mixing bowl, add spinach dip, dill, and feta. Mix well until combined. Fill the phyllo cups evenly with the spinach dip mix.
Bake for 12-15 mins until golden. Enjoy!
Tips
  • *You can find prepared spinach dip in the deli section of most grocery stores. You can find phyllo shells in the freezer section at the grocery store. 
  • *I like to buy a block of feta and crumble it myself. It’s cheaper, and it tastes better!
  • *This recipe is easily doubled or tripled. Most prepared spinach dip tubs come with enough dip to at least triple this recipe.
