Vic’s Tricks To…Cheese Tortilla Quesadilla
I think I may have just discovered the greatest thing ever.
A quesadilla…with a cheese tortilla.
Not only is this totally carb-free, but it is absolutely delicious and honestly…I’ll probably make my quesadillas this way all the time.
And it’s super easy!
On a parchment-lined baking sheet, spread an even layer of cheese into a circle, about the size of a regular tortilla.
Vic Trick: Make sure the cheese is laid totally evenly or some parts will brown before others.
Bake in a 400° oven until cheese is melted and the edges are slightly browned.
Remove from the oven and top half of the “tortilla” with whatever filling you desire. I put some chicken and salsa in mine.
Then use the parchment to fold over the tortilla so it forms a quesadilla. Cook again in the oven for about 3 minutes, then slice and enjoy!
So easy and sooooo cheesy.

Ingredients
- 2 cups shredded cheese (I like cheddar best)
- 1 tsp cumin
- 1 tsp garlic powder
- Shredded chicken or beef or veggies for filling
Instructions
- Preheat oven to 400°
- Mix spices in with cheese
- Spread an even layer of cheese in the shape of a circle on a parchment-lined baking sheet – 1 cup for a large tortilla, 1/2 cup for a small one
- Bake in oven for about 8 minutes or until cheese is melted and the edges are slightly brown
- Remove from oven and fill half of tortilla with filling, then use the parchment paper to help fold over the other side
- Bake in oven for 3 more minutes then slice and enjoy!
