Pumpkin Cheesecake Truffles
Pumpkin Cheesecake Truffles, those three words, each delicious enough on their own but combined they’re amazing, and did I mention they are the cutest little things you’ll ever see?
I wasn’t lying, put a tray of these out at your Fall gathering and everyone will think you hit the gourmet bakery! Here’s how to make these little cuties..
In a skillet over medium heat, add 1 Tbsp butter
then add 4 Tbsp room temp cream cheese
1/2 cup pumpkin purée
14 oz can of sweetened condensed milk
And 1 1/2 Tsp pumpkin pie spice
Stir until thick and combined, then add
1/2 cup graham cracker crumbs and 1/3 cup white chocolate chips, stir the mixture until chips are melted
Spray a 9x13 glass pan with nonstick spray
Spread mixture in pan evenly and refrigerate 2 hours or overnight
Scoop and roll into balls
Roll them in sugar
With a toothpick, press and roll it back and forth to make lines and a pumpkin shape
Finish each truffle with a chocolate chip stem!
Keep refrigerated until ready to serve

For the truffles
- 1 Tbsp butter

- 1/2 cup graham cracker crumbs
- 1/3 cup white chocolate chips
- Nonstick pan spray
- granulated sugar for rolling
- milk chocolate chips for stems
Instructions
How to make the truffles
- Spray a 9x13 glass pan with nonstick spray.
- Heat a large nonstick frying pan on medium, and melt the butter
- add the cream cheese, pumpkin purée, sweetened condensed milk and the pumpkin pie spice
- stir until thick and combined
- now add the graham cracker crumbs and white chocolate chips, mix well until chips are melted
- spread mixture in prepared pan
- refrigerate for 2 hours or overnight
- scoop and roll into tiny balls
- roll the balls in sugar
- using a toothpick, roll it back and fourth on the ball making lines for the pumpkin shape (watch the video for how to!)
- add chocolate chips for stems
- refrigerate until ready to serve!
