Double Chocolate-Strawberry Bread Pudding. I used a ganache to deepen the flavor of this bread pudding and then added more chocolate chips to bring it home. The strawberries balance out the chocolate, plus they make this dessert healthy. If only! I ALWAYS use challah or brioche when I make bread puddings. It just adds so much richness to the overall dish. Plus, the bread cubes don’t have to soak as long (which means you don’t have to soak it overnight). This goes well with vanilla ice cream and/or whipped cream. It also is just fine eaten right out of the dish with a spoon. Or so I hear.

Ingredients

  • ¼ cup heavy cream
  • ¼ up bittersweet chocolate chips
  • 1 ½ cup whole milk
  • 2 eggs
  • ½ cup brown sugar
  • 2 teaspoons vanilla
  • 1 teaspoon espresso powder
  • ½ teaspoon salt
  • 8 ounces challah, cut into ½” cubes
  • 1 cup sliced strawberries
  • ½ cup bittersweet chocolate chips
Instructions

Preheat oven to 350ºF. Grease a 2-quart baking dish.In a small saucepan, bring the heavy cream to a simmer. Add chocolate chips and let sit for a few minutes. Whisk to combine.
In a medium bowl, whisk together the milk, eggs, brown sugar, vanilla, espresso powder and salt. Whisk ½ cup of milk mixture into the chocolate mixture. Whisk in the remaining milk mixture.
Add the bread cubes to the baking dish. Evenly distribute the strawberries and the chocolate chips over the bread cubes. Pour liquid over bread cubes and press down to soak the bread. Let sit for 10 minutes.
Bake in oven for 30 minutes or until a knife inserted in the center comes out clean. Let sit for 10 minutes before serving. Top with whipped cream or vanilla ice cream.
