Watermelon Tea Popsicles

Only two ingredients needed for this healthy and refreshing recipe!

Made for summer, these watermelon tea popsicles will not only cool you down but may even add a level of sun protection with all the lycopene from watermelon and tea that contains rosehips.


Foods with lycopene have been shown to help prevent severe sun damage by destroying free radicals and fighting cell damage, particularly from UV rays. (For more information on lycopene, check it out HERE.)


So, grab your popsicle molds, some watermelon and some herbal tea and let’s get started on these healthy and refreshing pops!

Ingredients:


  • 2 cups of cubed watermelon, seedless or deseeded.
  • 1 cup of herbal tea containing rose hips, brewed and cooled. I used a delicious elderberry tea with rose hips as the second main ingredient. (don’t sweat the exact measurement…I just used the medium size on my Keurig, about 8 oz)

Get your popsicle molds ready.


Any mold will do, but I found this cute watermelon wedge-shaped one for a few bucks at HomeGoods…so cute! Here’s a link to Amazon for a similar one HERE.

Add your watermelon and tea to a smoothie or blender cup and blend until smooth and well mixed, about 1-2 minutes.

Transfer watermelon tea mixture to a spout measuring cup (or use a funnel.) If you don’t have a spout measuring cup, GET ONE! You find it extremely useful in the kitchen.


Carefully pour the mixture into your molds.

Put the lids on, and place in the freezer for at least 2-3 hours.

Now they are ready to enjoy!

How to unmold popsicles:

You can set them out for a few minutes to help with unmolding, however a method that I find works best, is to fill up a container to almost the height of the pops with warm (NOT hot) water and let set for about 20-30 seconds for an easy release.

Instructions
