How to make boozy mojito popsicles. This easy recipe comes together in about 5 minutes. Use real lemons and limes and fresh chopped mint for a delicious and refreshing flavor.

These are boozy ice pops made with rum, so be responsible. Although the alcohol content is low, they do have alcohol in them.

I recommend using a silicone popsicle mold for these. You can then remove them and store them in a freezer bag and reuse the mold.

Ingredients

  • 2 1/2 cups club soda
  • 1 1/2 cups fresh lime juice
  • 1 cup cold water
  • 1/3 cup fresh mint leaves, chopped
  • 1 lemon sliced thinly
  • 3 limes sliced thinly
  • 1 teaspoon liquid stevia
  • 4 tablespoons light rum
Instructions

Pour the fresh lime juice, club soda, and water in a large bowl and let rest for 5 minutes.
Add the chopped fresh mine, lemon slices, lime slices, sweetener, and rum to the bowl. Use a wooden spoon to mash the ingredients together.
Pour the homemade popsicles recipe into molds and insert the popsicle sticks. Freeze for 4 to 6 hours or overnight.
