The only thing better than candy... is homemade candy! With Easter coming up and the kids craving all types of candy and chocolates, you should try making these gluten free twix bars that are way healthier than anything on the shelf. These twix bars are sweetened naturally with pure maple syrup, loaded with protein from the almond flour and almond butter, and filled with healthy fats from the coconut flour and coconut oil. Topped with some chocolate and you really can't beat it! I always try to keep a stash in my freezer so I have some on hand to snack on throughout the day.

Ingredients
Bottom layer
  • 1/2 cup coconut flour
  • 1/2 cup almond flour
  • 1/3 cup coconut oil
  • 3 tbsp maple syrup or honey
  • 1/2 tsp vanilla
Middle layer
  • 1/2 cup almond butter
  • 1/4 cup coconut oil
  • 1 tsp vanilla
  • 1/4 cup maple syrup
  • pinch of sea salt
Top layer
  • 1/2 cup dark chocolate chips
  • 1-2 tbsp coconut oil
Instructions
For the bottom layer
Preheat the oven to 350.
Combine coconut & almond flour with melted coconut oil and maple syrup.
Press into a loaf pan and bake at 350 for 10-12 min.
Let it fully cool.
For the middle layer
Combine caramel layer ingredients over heat or microwave in increments.
Whisk together for a few min and once cooled, pour over the base layer.
Freeze for 1-2 hrs.
For the top layer
Microwave chocolate with coconut oil.
Pour over the top and set back in fridge for 5-10 min to harden.
Cut into long strips or bite sizes and enjoy!
For extras, keep in the freezer.
