If you are a nacho lover like me (dare I say nacho connoisseur icon ) you must try this nacho recipe! It is sure to be a crowd pleaser and super easy to make. Inspired by one of my favourite local Mexican restaurants amazing street corn, these nachos are packed full of all things delicious.


I like to add seasonings to my taco chips in this recipe to really add another depth of flavour. The corn topping features tender vegetables and a tangy sauce that is oh so creamy. Top with chopped cilantro and pickled jalapenos for added flavour. Make these today! YUM!

Ingredients
For the chips
  • 1 - 270 gram bag of your favourite taco chips
  • 2 Tbsp olive oil
  • 1 tsp of each; paprika, cumin, chili powder
For the corn topping
  • 2 cups frozen corn
  • 1 Tbsp olive oil
  • 1/2 red bell pepper, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/3 cup plain Greek yogurt
  • 1/3 cup light mayonnaise
  • 1/2 tsp each; pepper, cumin, paprika, garlic powder, onion powder, chili powder
  • 1/2 cup cilantro, chopped (plus more for garnish)
  • 1/2 cup chopped pickled jalapenos (plus more for garnish)
  • 1 cup crumbled feta
Instructions
For the chips
In a large mixing bowl, add all taco chips.
Drizzle with olive oil and use tongs to toss and evenly coat all chips.
Next sprinkle with seasonings and toss again. Set aside.
For the corn topping
In a small frying pan, add in corn kernels and oil. Heat over medium high heat until corn begins to brown, about 5 minutes.
Add in red pepper and red onion. Saute for 3-4 minutes until soft.
In a small mixing bowl, add in Greek yogurt, mayonnaise and spices. Stir to combine.
Add warm vegetables to mixing bowl with yogurt mixture. Stir to combine together.
Add in cilantro and jalapeno. Stir once again.
To assemble
Preheat oven to LOW broil.
Place prepared taco chips on baking sheet and use tongs to spread evenly.
Use a spoon to dot corn mixture on top of the taco chips.
Bake for 5-7 minutes or until warm. Baking time will vary between ovens so keep a close eye during this step.
Remove from the oven and top with additional cilantro, jalapenos and feta.
Serve warm and enjoy! YUM!
