Ingredients

  • 24 Ritz Crackers
  • Peanut Butter creamy or chunky
  • 1 cup milk chocolate chips
  • 1/2 tsp oil
  • 1/2 cup white chocolate chips if desired
  • 1/4 tsp oil if using white chocolate to decorate
  • Sprinkles if desired
Instructions

Set 12 Ritz crackers out on a sheet of parchment paper.
Spread desired amount of peanut butter on each of the 12 Ritz crackers and then, top each with another cracker to make a sandwich. Press each cracker down gently.
Melt milk chocolate and oil slowly in the microwave stirring between 20-25 second intervals. Repeat until nearly all of the chips have melted. Continue stirring to melt the remaining pieces.
Dip the Ritz/peanut butter sandwiches in milk chocolate and decorate as desired. Remember to decorate before the chocolate solidifies. (I use a fork to dip these into the chocolate and then, I tap the fork on the edge of the bowl to remove the excess chocolate)
If using white chips to decorate, melt them with oil as you did with the milk chocolate and drizzle over the peanut butter cups. Since there is less chocolate, microwave for shorter intervals.
Allow time for the chocolate to set up. Then, serve, eat, or give as a gift.
Store in an airtight container.

I used to make these for Christmas when my son was young. They are very good, thank you for sharing. Sometimes I would spread marshmallow fluff on one cracker & peanut butter on the other before dipping, also very tasty!

These aren’t peanut butter cups they are chocolate coated peanut butter crackers. They look delicious but the title is a bit wrong.
