Does anyone else feel like if they were able to, they’d eat pizza for breakfast, lunch, or dinner? (hopefully, it’s not just me…) Well now you can, since making this chewy pizza dough only takes about an hour, you’ll even be able to make it on a Monday evening!

For the best results follow these tips:


  • Use a digital scale or the spoon and level method to measure flour: too much flour will change the texture of the dough.
  • Don’t use a rolling pin to shape the dough: use your hands to create thicker edges!
  • Let the dough rest while shaping: if it is snapping back toward the center, let it rest for 5 minutes before continuing to shape it.
  • Don’t add too much flour: this is a high hydration dough- so it’s meant to be on the stickier side.
  • Use good quality extra virgin olive oil: drizzle some oil on the crust prior to baking for crispy edges.
  • Preheat the oven: a hot surface and oven create a crispy exterior but soft interior.

Ingredients

  • ¾ cup warm water , about 110 degrees Fahrenheit
  • 2 ¼ tsp active dry yeast, for thin crust reduce to 1 ¼ tsp
  • 1 tbsp agave nectar , or sub. cane sugar
  • 1 tsp sea salt
  • 2 tbsp good quality extra virgin olive oil
  • 2 ¼ cup all purpose flour, or bread flour, spoon & leveled- plus extra for kneading
For Baking
  • 1-2 tbsp good quality extra virgin olive oil
Instructions

In a medium bowl mix the agave nectar into the warm water until mostly dissolved. Add the yeast and stir until combined. Set aside to proof for 5 minutes. *See Notes.
In the bowl of your stand mixer (or a large bowl if hand kneading) combine all the dry ingredients (flour, salt). Make a well in the center.
Pour the yeast mixture into the bowl along with the olive oil.
Mix together to form a scraggly dough. Transfer to a floured surface and knead for 8-9 minutes.
If using a stand mixer: set the mixer on a medium-low speed and knead the dough for 5-6 minutes with the dough hook attachment. The dough should start to climb up the dough hook once it is ready.
Transfer the dough to an oiled bowl, and cover with plastic wrap or a damp towel.
Let the dough rise, covered in a warm place for about 25 minutes. Once risen, the dough should be about 1.5 times its original size.
On some parchment paper or an oiled surface, stretch the dough out into a 12 inch circle or your desired pizza shape. Press the dough out toward the edges to create a thicker crust.
If you want a thicker crust: stretch the dough until it is about ½” thick in the center
If you prefer thin crust: stretch the dough until it is about ¼” thick in the center
Bake at 475 degrees Fahrenheit for about 12-15 minutes after applying any desired toppings.
Tips
  • *The yeast should bubble up at least an inch or two. If there is no bubbling happening at all, your yeast may not be active, and the dough will not rise.
  • **If hand kneading, you'll want to knead the dough for about 8-9 minutes.
