Sugar cookies are a classic holiday treat & fun to make for Christmas so I put my own spin on the recipe! It's no flour, no butter, no eggs, and it tastes just like cookie dough. How? The magic of garbanzo beans. Garbanzo beans are a legume that are a great source of fiber, protein, manganese, magnesium, and iron. Their flavor profile depends largely on what is added with them, you can make hummus, roasted chickpeas, add into a soup/salad, "cookie dough", etc.

Vegan Sugar Cookie Dough
Recipe details
Ingredients
- 1 cup chickpeas (rinsed/drained)
- 3/4 cup peanut butter
- 1/4 cup maple syrup
- 1 tbsp brown sugar
- 1/4 cup oats
- 1/2 tsp salt
- Rainbow sprinkles
Instructions
- In a food processor, pour in all ingredients and puree for 2-3 minutes
- Top with additional rainbow sprinkles if desired
Tips
- Rainbow sprinkles give the sugar cookie look and taste but chocolate chips, Christmas sprinkles, etc. will work fine as well
- Another word for chickpea is garbanzo beans
