Twix Protein Cookies – Copycat Crumbl but Healthy & Gluten Free

Beautiful Crumbl inspired Twix Protein Cookies made with a vegan and gluten free cookie, peanut butter protein caramel and sugar free chocolate. A copycat Crumbl Twix cookie at home, but healthy and high protein!

I recently heard the hype of the Crumbl bakery cookies and everyones making homemade copycat versions of those.

So hopped on the train here with my own high protein version of the Crumbl Twix cookie, to get the authentic feel in my kitchen, but also keep it healthy.

Perfect sugar free protein Twix cookie here: protein shortbread cookie, protein caramel made with peanut butter powder, and a sugar free chocolate topping.


Ingredients for Protein Twix Cookies

These Crumbl bakery inspired high protein Twix cookies are made with a few healthy ingredients, use oat flour, and have no oil or butter.



  • Oat Flour – Use gluten free if needed
  • Protein Powder for high protein cookie recipe, and also replace the sweetener.
  • I recommend the ProteinWorld Slender Blend or Whey Protein Powder for this recipe to keep it sugar free; Use the code HAYLSKITCHEN for a discount.
  • Another option would be Quest.
  • Creamy, Runny Tahini
  • A bit of Unsweetened Almond Milk

And for peanut butter protein caramel cookie filling

For a sugar free, low calorie and high protein dessert, I topped the Crumbl twix cookie with a protein peanut butter caramel.



  • Peanut Butter Powder, also known as Powdered Peanut Butter. I recommend Lakanto for a sugar free version (the code HAYLSKITCHEN gives you a discount). Or you could use the one from PbFit too.
  • Vanilla Protein Powder – this is what replaces the sugar here. I used ProteinWorld Whey again.
  • Water

And the Sugar Free Chocolate Topping for homemade Crumbl Cookies:


  • Sugar free Chocolate Chips to make this a protein fudge bar with no added sugar. I use the ones from Lakanto here (HAYLSKITCHEN for a discount here too). Another option is Lily’s Chocolate Chips.
  • A bit of Coconut Oil

Ingredients

  • ¾ cup Oat Flour, 68g, see post for subs
  • ¼ cup Vanilla Protein Powder, 22g
  • 1½ Tbsp Runny Tahini, 24g, see post for subs
  • 2 Tbsp Almond Milk
Peanut Butter Protein Caramel:
  • 2 Tbsp Peanut Butter Powder, 12g
  • 1 Tbsp Vanilla Protein Powder, 5g
  • 1 Tbsp Water
Chocolate Topping:
  • 1 Tbsp Chocolate Chips, Sugar-free recommended below, 15g
  • ⅛ tsp Coconut Oil
Instructions

Preheat oven to 350°F, and line baking sheet with parchment paper.
In a bowl, combine cookie ingredients – oat flour, protein powder, tahini and almond milk – and mix to form a dough.
Divide dough into 4 parts, roll into balls, and flatten into cookies (about ⅓-½” thick, 2½” wide).Use fingers to press down in the middle to make shallow depression about half the cookie width.
Place on parchment lined sheet and bake for 10 minutes.
Let cool completely, about 15 minutes (move to cooling rack to speed up process).
Protein PB Caramel:
In a bowl, stir peanut butter powder, protein powder and water until combined.
Chocolate Topping:
Place the chocolate chips and coconut oil in a microwave safe bowl and microwave at 20 second intervals, stirring – for about 45 seconds until completely melted.Let cool.
Assemble:
Once cookies are completely cool, spoon caramel mixture in middle of cooke and spread. Top with melted chocolate.
